Ingredients for Whole Wheat cookies
- One and half cups atta (whole wheat flour ) that is 195 grams
- A half-teaspoon of baking powder
- Cardamom powder half a teaspoon
- Half teaspoon cardamom powder
- 1/4 teaspoon cinnamon powder
- Pinch of salt
- 1/2 cup ghee or clarified butter 100 grams in semi-solid form (not melted).
- Half cup jaggery powder 64 gm should be determined after the jaggery powder was sifted.
- 45 ml or 3 tablespoons milk
Preparation Instructions :
- The first and foremost step is to preheat the oven to 350 F degrees.
- In a big bowl add atta (whole wheat flour) , baking powder, elachi powder (cardamom) and salt. Then whisk it all together and set it aside.
- In a different big bowl, sift the jaggery powder, so that all the large particles will get separated and just the powder is left.
- Then after that add ghee to the jaggery powder and start whisking the batter until combined and becomes fluffy. Once it is done add milk to the mixture and whisk it again , this step can be done with a stand mixer.
- Transfer the jaggery mixture to the flour bowl which was kept aside and using your hands or mixer mix it all together to make a dough. Note: If the dough is not molding well then you need to add 1/2 tablespoon of milk.
- After that just cover the dough and rest it for 12–15 minutes to be exact.
- Once the dough is fluffy and soft, take a roller and roll the dough with it. Cut into circles of almost 2 inches diameter, around 1/4 inch thick. You will get about 28 cookies from this dough.
- In Non-Stick Baking Tray Pan put a baking sheet lined with parchment paper and then transfer cookies to the tray. You can make a design and pierce on the top with a fork.
Bake at 350 F for 16–18 minutes or until crispy and dark golden brown in color. To make it super crispy you can bake it for 18 mins.
